Hey everyone! It's been awhile since I posted, but thought it was about time. Especially since I made a delicious salad this weekend.
This was inspired by a salad I got from the little cafe at my work. I never really think to put fruit into a green salad, although every time I have, it's extra tasty!
One of the key ingredients of the salad are Sugared Pecans. I searched AllRecipes.com, combined and modified a couple of recipes until I came up with a concoction that sounded good.
Sugared Pecans
3Tbsp Egg Beaters (you can also use 1 egg white)
2 tsp water
1 1/2 tsp vanilla
1 lb pecan halves
1/2 cup sugar
1/2 cup brown sugar
3/4 tsp salt
1/2 tsp cinnamon
Preheat your oven to 250°. Spray down a cookie sheet or use some parchment paper. I like the parchment paper - much easier clean-up!
Put the egg, water and vanilla in a mixing bowl and whip them until they get frothy. Throw in the pecans and get them really well coated in the egg goo.
Mix up your dry ingredients separately. Sprinkle about half of that concoction over your nuts and give it a couple stirs. Sprinkle the rest and stir again until every nut has delicious yumminess all over it.
Spread your nuts out on the cookie sheet and bake for about an hour. Get in there and stir them around about 3 times during the cooking process.
Let them cool and try not to eat them all while they're sitting out.
Now onto the salad...
Delicious Salad That I Could Eat Every Day (I really need a better name for this)
(All ingredient amounts are estimated)
1/2 lb Spring Mix Salad (The one that looks like it has weeds in it)
1/3 cup craisins
1/2 lb strawberries, sliced thin
1/2 red onion, sliced thin
1/2 cup mandarin oranges, drained
1/2 of the Sugared Pecans you just made
1/4 cup Chow Mien noodles (the crispy kind)
Grated Parmesan cheese until it looks like enough
Marie's Raspberry Vinaigrette (or any brand - this is what I use) to taste
Toss all ingredients except for the vinaigrette in a salad bowl. Serve with the vinaigrette on the side.
I waited until right before serving to throw in the strawberries, mandarin oranges, pecans, noodles and cheese.
My husband gave me a bad time about bringing this to a burger and hot dog BBQ, but it ended up being gone at the end. I may have eaten most of it though. A few people ate it without the dressing and still loved it!

I obviously shouldn't blog recipes about nuts. I am giggling reading back the pecan recipe.
I love "delicious yumminess." AND, I love tossing fruit in with my spinach salads. Great recipe!
Do you think you could sub the regular sugars for Splenda and Splenda Brown Sugar blend and get a similar result for reduced calories?
I threw strawberries into a salad last week, and was surprised by how good it was. Steak, feta, strawberries, cukes, and weeds. Num!
I have no idea if the Splenda would work. It's often used for cooking, so I don't see why not. Maybe try with a small batch first to see if it works so you're not wasting all the delicious pecans in case it doesn't.
